Athlone businesses Dead Centre and Thyme collaborate on new beer

Two neighbouring businesses in Athlone have joined forces to launch a new beer.

Dead Centre Brewing craft brewery and Thyme restaurant, both located at Custume Place, collaborated on the brew, which uses thyme as one of its ingredients.

The beer is a Orange and Thyme Pilsner which will be sold exclusively in bottles by the two businesses from today (Wednesday).

It's the result of a creative partnership between Thyme’s chef and owner, John Coffey, and Dead Centre Brewing's founder, Liam Tutty.

Together, they created a beer designed to complement the menu in Thyme, a renowned restaurant which has been a recipient of the Michelin Bib Gourmand award for several years in succession.

"For the past five and a half years, we've built a wonderful friendship with Liam and the team at Dead Centre Brewing," said John Coffey.

"Having their fantastic brewery right next door has been a real asset, and we've proudly featured their beers on our menu for many years.

"We often joked about collaborating, and now it's no longer just talk. We're thrilled with the result of our partnership, and we hope you enjoy this finely crafted beer as much as we do."

Liam Tutty commented: "We've always admired Thyme’s approach to food, and it was a natural fit to collaborate on something unique.

"This pilsner is a perfect balance of classic brewing methods with modern, local ingredients. We’re excited to share it with both our patrons and Thyme's."

The beer was made using Irish malt, Sicilian orange, and thyme sourced from Lough Boora Farm.

It is available in 330ml bottles exclusively at Dead Centre Brewing and Thyme Restaurant.
