A Slice of Kindness: Liz Gilhooly to host Athlone Daffodil Day coffee morning
Well-known Athlone woman Liz Gilhooly is preparing to host an annual Daffodil Day coffee morning, in aid of the Irish Cancer Society, in the town's Sheraton Hotel on Friday, March 28.
Ahead of the event, Leah Fletcher of Athlone-based wellness brand deDANÚ, shared this reflection about Liz and her preparations for the upcoming event:
"In the heart of Athlone, few individuals embody community spirit quite like Liz Gilhooly.
"Known for her baking talents, her 'Kitchen of Liz Gilhooly' has long been a local favourite for those seeking delicious baked goods. I fondly recall always having her jam in our fridge growing up.
"Beyond her baking, it's Liz's unwavering commitment to community service that truly stands out. Recently, I had the pleasure of joining her and her husband, Bob, for lunch at their home. The meal was a delightful spread: a tasty quiche, fresh salads, homemade beetroot, cordial, a delightful tart, and, of course, a pot of tea.
"As we dined, Bob shared stories about playing basketball with my grandfather and their mutual connection to the previous owner of my parents' home. These shared histories highlight the close-knit nature of our community. Had I not been rushing back to work, I would have gladly stayed longer to hear more.
"After lunch, in true Liz style, she got straight to business, enlisting my help with the upcoming Daffodil Day coffee morning, an event she has organised for years.
"This year's gathering is set for Friday, March 28, at the Sheraton Athlone Hotel from 10:15 am to 12:30 pm. Attendees can expect beautifully-arranged tables, a welcoming atmosphere, and an array of baked goods prepared by Liz.
"Cancer has touched many families, including Liz's and my own. In Ireland, thousands of people will be diagnosed with cancer this year, underscoring the critical need for community support and research funding.
"Liz's dedication transforms the coffee morning into more than just a fundraiser; it's a symbol of hope and solidarity for all affected.
"Beyond the coffee morning, Liz extends her energetic efforts into local schools, organising hamper fundraisers in the weeks leading up to Daffodil Day. These initiatives raise essential funds and instil a sense of community in the heart of our community - the schools.
"Adding excitement to the morning, there will be a raffle featuring hampers and vouchers donated by local businesses, including Wineport Lodge, Clodagh's Boutique, deDANÚ, and more. My favourite is Liz's specially curated hamper of baked goods and treats!
"It's heartening to see the community come together, each contribution reflecting Athlone's collective spirit.
